Its elaboration is totally artisan; its flavor is intense at the same time as full of delicate shades; the proportion superior to 56% of oleic acid in the mixed fat does it oily at the same time as light. Its curing treatment surpasses the 36 months. All this makes the Iberian ham the jewel of Spanish gastronomy.
